The wine is made from 60% Tavkveri and 40% Shavkapito grapes grown in Kartli region, Village Dzalisa and Vaziani.
Grapes are picked only manually to ensure the highest quality it is directly crushed in to 900 to 1300L Qvevris. Wild fermentation starts at the natural temperature. Naturally started fermentation stops when wine is dry, which is followed with natural MLF fermentation. Maceration and skin contact lasts between 12 to 25 days.
Around end of October, macerated wines are taken of their bottoms, which contain: Yeast lees, skins and seeds. Then wines are transferred back to Qvevri for further clarification and style formation till the beginning of spring.
The Color is mature but still ripe with cherry hues. Harmony of dried black plums and cherry and matured cornelian cherry flavors. Palate is tasteful and exuberant bearing dried Cornelius and forest berries. Pronounced varietal power excellently expressed vinosity.
Goga Tevzadze established his traditional micro-winery at his home in Mtskheta in 2018. A founder of the small craft distillery “Riravo," which produces high-quality fruit brandies, he eventually left to pursue his love of winemaking. Tevza is focused on producing lively, natural, and highly expressive wines from the distinctive varietals of Kartli, sharing the region's native wine traditions with the world.
