Shalauri’s Saperavi is made from 100 percent Saperavi grape grown in the Tsinandali zone 28-year-old vineyard.
The wine is natural, made by traditional Qvevri method. Is is fermented using naturally occurring indigenous wild yeasts. For Shalauri red wines to be released to the market, they must be aged for a minimum 4 years with at least 18 months in Qvevri.
The destemmed and partially crushed grapes are poured into Qvevri. Once alcoholic and malolactic fermentation is over, skins is removed and Qvevri is refilled. Wine is kept in Qvevri for 18 months. After the completion of aging wine in Qvevri, wine is bottled and then kept for aging in bottles at the underground cellar.
Delightful aromas of red and dark fruits are followed by a velvety wine. Concentrated flavors of red cherries, fresh prune plums, baker’s chocolate and dried herbs are boosted by big sweet tannins that give this wine great aging potential.

Shalauri vyrobilo své první víno v roce 2013 s portfoliem zahrnujícím tradiční gruzínské odrůdy Rkatsiteli, Mtsvane a Saperavi, když za výhradní metodu výroby vína byla zvolena tradiční technologie – v qvevri.
