100% Dzelshavi (qvevri red). Appellation – Chiatura, Imereti. High quality crop is mainly a result of a cool and moderate climate. In Imereti, the grape varieties tend to be characterized by late ripening, which leads to grapes have medium to high level of acidity, being typical for the wine of Imeretian type. It is typical for Dzelshavi grape that the levels of sugar and acidity are essentially balanced and the temperature differences give it complex and additional terroir flavors, what tastes outstanding in wine.
Nose -pronounced aromas of Chocolate, red, wild forest berries and black plums, light aroma of paprika, gives it an extra elegance.
Palate - Dry, with light body and medium acidity, and a long finish.
Food paring - light spicy food, varieties of meat and cheese, herbs and vegetable.
“Solomone”, their great grandfather, is the name of the man who started the very first winemaking in 1806 where the winery is located today. They only represent Imeretian varieties of vines made in qvevri as well as classic-style wines. The high-quality crop that they have is mainly the result of a cool and moderate climate. In the year 2010, they started the cultivation of new vines and in the year 2019 produced the first 2000 bottles of Solomone.
